I am going to tell you what are
the food-borne zoonotic pathogens

and why they are important to
public health and to humans.

And first of all this term zoonotic,
it comes from the Latin term zoonosis

which means diseases and infections
which are transmissible

between animals and humans,
and quite often these infections
00:00:40
are transmitted through
contaminated food stuffs.

The most important food-borne
pathogens in Europe are bacteria
00:00:51
such as Salmonella, Campylobacter
and certain types of Escherichia coli,
00:00:57
and these bacteria typically
cause diarrhoea in humans

but also sometimes
more serious symptoms.

And then we still have some
food-borne parasites in the EU

such as Trichinella and then of
course there are also some other pathogens.

Animals, such as pigs, cattle, and
poultry they quite often carry
00:01:25
these food- borne pathogens in their
gut content, or skin or even in their
00:01:30
muscles, but in most cases these
pathogens do not cause any disease in animals.

But when food from these types of
infected animals is being produced, the

food can become contaminated with
these pathogens and then when humans
00:01:48
eat this type of contaminated food they
can get infected and get the disease.

These food-borne zoonotic
pathogens are important in Europe

and that is because these pathogens cause
over three hundred thousand reported
00:02:07
human cases in the European Union
each year, and most likely there is
00:02:12
even more cases because of the common
under-reporting.

So we have actually over
two hundred thousand
00:02:23
reported Campylobacterosis
cases in humans each
00:02:28
year in the European Union
and around one hundred thousand
reported Salmonellosis

cases in humans and for the other
pathogens is of course less.

Thus it is important to prevent these
diseases from occurring and in fact
00:02:48
the European Union has already issued
legislation which aims to reduce
00:02:55
these pathogens in animals and also
further up in the food chain.

And these methods have already
resulted in the reduction of
00:03:05
human Salmonellosis cases in the
European Union and these cases
00:03:09
have actually dropped by almost
half in the last six years.

But you can also take
some actions by yourself

to avoid these diseases, and for
that purpose it is important

always to cook raw meat
and raw eggs thoroughly

and also have good
kitchen hygiene at home.
