about EFSA’s work in

helping to modernise
meat inspection methods.

The main purpose of
meat inspection is to

make sure the meat we eat is safe.

The most significant
public health hazards are

foodborne pathogens -
such as Campylobacter,
00:00:33
Salmonella or E.coli – and
chemical contaminants and residues

such as veterinary drug residues.

Meat inspection also plays a
vital role in monitoring
00:00:45
some animal diseases and
ensuring that
00:00:48
animal welfare standards
are being observed.

So what is EFSA’s role in
meat inspection?

Since 2004, EFSA has been
providing independent
00:00:59
scientific advice on the
health hazards
00:01:02
that can arise
in meat production
00:01:04
and how best to detect
or control them.
00:01:06
Our findings are used
by risk
00:01:09
managers in the EU and
in Member States to
00:01:12
improve meat inspection
methods and ultimately
00:01:15
protect consumer health
by making food safer.

Traditional inspection
methods use physical
00:01:21
checks – such as palpation,
visual inspections
00:01:25
and incisions - to
examine meat for lesions
00:01:29
or flaws such as bruising
or broken bones.

However, such manual
practices often date back
00:01:36
decades and now
may not be adequate
00:01:39
to protect public health.

In 2010, EU authorities asked
EFSA to help update

these inspection methods
00:01:47
by developing a more rigorous
science-based system.

EFSA has been tasked with
introducing a risk-based approach
00:01:55
to meat inspection for
each stage of meat production

– for example on farms, during the
slaughtering or further processing of meat.

This is a complex task and
- to complete it -

EFSA is using its experts
from a number of different fields

– including animal health
and welfare, zoonoses
00:02:15
– which are diseases
that can be transmitted

from animals to humans -
and data collection.

The approach is based on
identifying public health

hazards in meat that are
currently important –

such as foodborne diseases
or contaminants -

and ranking them in order of
the threat they pose.

EFSA is looking into
what factors influence

the presence of these
hazards in the meat chain,

and how to best
measure them.

EFSA has been asked to
recommend improvements to

existing inspection methods as well as
suggesting alternative techniques.
